A Special online Cookbook: In the kitchen with Elise

Pistachio Breaded chicken

My dearest Diary, I recognise that many times people say I have no time to cook, or I don't know how to cook when they have many resources e.g The internet, YouTube and many other ways.

Dear Diary here is a new blog I have found so interesting :), its written by a Pastor's wife whose name is Elise Jackson! yes she is married to Pastor Damien Jackson the know Author of the book: Shoulda been dead.

And diary with her blog I notice that she doesn't just cook for the sake of it, I can see its something that she loves! and she shows that she is having fun while doing it!

My dearest Diary below is the link for her blog...for thoes reading this part of my diary!

Here is her latest recipe, check it out!

My husband being the exercise and health fanatic that he is. He loves anything to do with  a healthy lifestyle. So when I came across this pistachio breaded chicken he was eager for me to try it because since it has the pistachio nut. It is jam packed with protein, fiber and so much more  of the good stuff.  I served this Pistachio chicken with brown rice, and a spinach salad.

Ingredients
Chicken Breasts
Pistachios
Seasonings (salt, pepper, etc. (your choice)

It is really easy to make. All I did was get my chicken breasts and slice it in half long wise so that the breasts can be thinner. Then I cleaned my chicken by cutting off all the fat and washing it with vinegar and water to remove all of the slim.

Once that was done. I lightly seasoned my chicken (because pistachios already have a little salt) I seasoned my chicken with  a little oil (just for the seasonings to stick) salt, pepper, all purpose seasoning and garlic salt.

After seasoning, I took my pistachios - removed the shell and put all the actual nuts into the blender and blended it up into crumbs. (It needs to look like bread crumbs) Once you have blended it. Place you pistachio crumbs onto a plate and then bread your chicken by rubbing the seasoned breasts both sides onto the pistachio crumbs.

Set a frying pan with a little oil onto the stove and put it on medium heat. Fry your breaded breast for about 2 - 3 minutes on each side. Be very careful because it burns quickly. If it is burning to fast. Just lower the heat. They should come out golden brown not black.

Serves well with rice, mashed potatoes or even pasta.

The Professor and The Student

Dear Diary I came across this post written on another blog and I just had to share it, it isn't to impose God on anyone nor for them to be forced to change their views but for them to use their common sense. So my dearest diary here it goes :
Professor: You're a Christian, aren't you, son?
Student: Yes, sir.

Professor: So you believe in God?
Student: Absolutely, sir.

Professor: Is God good?
Student: Of course!
Professor: Is God almighty?
Student: Yes.

Professor: My brother died of cancer, although he often prayed for God to heal him. Many of us would try to help someone in need. Yet God didn’t help him. So how can God be good? Hmm?
[The student remained silent]

Professor: You don’t have an answer do you? Let's start this conversation over, young man. Is God good?"

Student: Yes.

Professor: And Satan, is he good?
Student: No.

Professor: Where does Satan come from?
Student: From... God...

Professor: That's right. Tell me, son. Does evil exist in this world?
Student: Yes.

Professor: Evil's everywhere, isn't it? And didn’t God create everything?
Student: Yes.

Professor: So, who created evil?
[The student didn’t answer]

Professor: Is there sickness in this world? Immorality? Hatred? Ugliness. All the terrible things… don’t they exist in this world?
Student: Yes.

Professor: Who created them?
[The student didn’t have an answer]

Professor: Science says you have five senses that you use to identify and observe the world around you. Tell me, son, have you ever seen God?
Student: No, sir.

Professor: Tell me, have you ever heard your God speak?
Student: No, sir.

Professor: Have you ever felt your God, tasted your God or smelled your God? In fact, have you ever sensed your God at all?
Student: No, sir, I'm afraid I haven't.

Professor: Yet you still believe in Him?
Student: Yes.

Professor: According to the rules of empirical, testable and demonstrable protocol, science says your God doesn't exist. What do you say to that, son?
Student: Nothing, I have my faith.

Professor: Yes, faith. That is what science has a problem with.
Student: Professor, is there such thing as heat?
Professor: Yes.

Student: Is there such a thing as cold?
Professor: Yes.

Student: No, sir, there isn't.

(The classroom became very quiet)
Student: You can have lots of heat, even more heat, super-heat, mega-heat, white heat, a little heat or no heat, but we don't have anything called 'cold'. We can hit 273 degrees below zero, which is no heat, but we can't go any further than that. There is no such thing as cold. Otherwise, we would be able to go colder than -273°C. You see, sir, cold is only a word we use to describe the absence of heat. We cannot measure cold. Heat can be measured in thermal units because heat is energy. Cold is not the opposite of heat, sir, just the absence of it.

(The classroom remained in silence)
Student: And what about darkness, professor? Does darkness exist?
Professor: Yes. What is night, if it isn't darkness?
Student: You are wrong again, sir. Darkness is the absence of something. You can have low light, normal light, bright light or flashing light, but if you have no constant light, you have nothing and it’s called darkness, right? In reality, darkness isn’t. If it were, you would be able to make darkness darker, wouldn’t you?
Professor: So what is the point you are making, young man?
Student: Sir, my point is that your philosophical premise is flawed.
Professor: Flawed? Can you explain how?
Student: Sir, you are working on the premise of duality. You argue there is life and then there is death, a good God and a bad God. You are viewing the concept of God as something finite, something we can measure. Sir, science can’t even explain a thought. It uses electricity and magnetism, but has never seen, much less fully understood wither one. To view death as the opposite of life is to be ignorant of the fact that death cannot exist as a substantive thing.
Death is not the opposite of life, just the absence of it. Now tell me, Professor. Do you teach your students that they evolve from a monkey?
Professor: If you are referring to the natural evolutionary process, yes, of course, I do.

Student: Have you ever observed evolution with your own eyes, sir?
(The Professor shakes his head with a smile, beginning to realize where the argument is going)
Student: Since no one has ever observed the process of evolution at work and cannot even prove that this process is an on-going endeavor, are you not teaching your opinion, sir? Are you not a scientist, but a preacher?
(The class is in uproar)
Student: Is there anyone else in the class who has ever seen the Professor’s brain?
(The class breaks out in laughter)
Student: Is there anyone who has ever heard the Professor’s brain, felt it, touched or smelt it?... No one appears to have done so. So, according to the established rules of empirical, stable, demonstrable protocol, science says that you have no brain, sir. With all due respect, sir, how do we then trust your lectures, sir?
(The room is silent. The Professor stares at the student, his face unfathomable)
Professor: I guess you’ll have to take them on faith, son.
Student: That is it sir. The link between man and God is FAITH. That is all that keeps things moving and alive.

Preparation Task

Dear Diary I would like to share a task I learnt in the Preparation group I am in, because I believe this task could help whoever is reading this part of my diary.

Just to remind you diary that the preparation group is: If a girl is part of this group is because she might not be ready to face Sisterhood yet, but you would like to work closer with the Big Sisters and receive some guidance, so here in this group they are able to help us.

Every month, the Big sisters will think of tasks to help us develop in your faith and they will need our feedback too.

They will need us to keep in touch, tell us in the group what is going on in our life, how are the tasks helping us or not!

They created this group specially for us, so we know they are here for us. The Big Sisters hope we will take it seriously, grow and get the best of it. Many times we as girls might not understand the reason of a task, but the objective is that as we do it, the results will lead us to answers.

The temple of The Holy Spirit Task

Deary Diary for me to be honest this task is for me, because when I was back in the world I never used to wear provocative clothing, I was a tom boy even when I came to the church..

So not even nail polish or make up was in my vocabulary, actually I vowed to myself that I would never wear anything lady like, it was recently I started to take pride in myself, So now that this task is here to boost my confidence, it encourages me to present myself every wed and sun to look beautiful for my God.

My dearest diary in the world I didn't care about how I dressed going to any church at all, so how much for God?

Its so much more than dressing up but its for us to learn to love ourselves, and also to show the beauty of how we are inside for it to show on the outside...

So diary here is a list of things I did to make sure this day was a memorable day:-

1) Before going to the church I washed my hair, oiled it and set it to the way I wanted.
2) I ex-foliated my face for 15 minutes.
3) Bath with a sweeter smelling bath foam.
4) Prayed before choosing my clothes because I wanted to feel comfortable in what I was wearing, and God did show to me.
5) I painted my nails more carefully.
6) I did my make up.

Diary and the thing is almost everyone was complimenting me, I didn't take these compliments for myself I took it for God, because i gave my whole day into his hands before doing anything.

It is well with you!

Hi Diary I just wanted to share a little uplifting message :)

Tell the righteous it will be well with them, for they will enjoy the fruit of their deeds”
(Isaiah 3:10

Dear diary No matter what’s happening in our life, God wants us to know that it is well with us today!

Diary I need to remember, that our God does not end in defeat. He didn’t say, “Most of the time, I will cause you to triumph.” No, He said, “I will always cause you to triumph.” We may go through difficulties, through unfair situations or through betrayals, but the point is that we are going through it. We're not staying there! It’s not permanent. Defeat is not our normal state. If all is not well in our life that simply means you haven’t made it to your new destination. I need to stay in faith, keep declaring His Word and keep moving forward because it is well with me!
